Bacon Dumplings in South Tyrol

Chef Klaus Gander cooks fine cuisine fish and venison specialities as well as hearty traditional dishes from the region.


Alle ingredients come directly from regional producers. For our viewers he made an original South Tyrolean dish - Bacon Dumplings!

Recipe for 20 Dumplings (To serve 10)

300 g White Bread
200 g Bacon
80 g Onions
50 g Butter
20-25 g Flour
4 Eggs
250 ml Milk
Finely chopped Parsley

1. Cut bread in cubes.
2. Fry onions and finely diced bacon in butter. Add to bread and mix.
3. Mix in flour.
4. Mix eggs, parsley and salt. Pour over bread and knead to dough.
5. Leave mixture to stand for fifteen minutes. Shape dumplings and simmer in salted water for about fifteen minutes in covered saucepan.
