Moonfish, an Icelandic Delicacy

Vid Tjörnina, probably Iceland's most famous fish restaurant, is very popular with celebrities, both local and visiting. When we dropped in, head chef Olaf Gudmundsson was serving a very special delicacy, Moonfish.

Here is our version of his recipe, which serves 2 people.

Ingredients:

700 grams Tuna steak
a sprig of fresh thyme
the juice of half a lemon
1 teaspoon green peppercorns, coarsely crushed
1 small glass white wine
250 ml fish stock
2 or 3 shallots
1 tomato
2 or 3 tablespoons olive oil
a little butter

Method:

Salt and pepper the tuna steaks, sprinkle with lemon juice, then fry quickly in a very hot pan with the oil. Then put in the oven on a low heat, so that the steaks stay juicy.

Meanwhile prepare the sauce. Fry finely chopped shallots gently in butter until transparent. Add tomato chopped in cubes, the crushed green peppercorns, thyme and finally the fish stock. Boil rapidly for a few minutes, then add the white wine.

Spoon the sauce over the steaks, serve with fresh vegetables and potatoes. Bon appetit!
