Chef Henri Bach whips up a Ruhr Valley delicacy at the 'Résidence' in Essen. This part of Germany is known more for its industrial past than its culinary present, and yet the cuisine here is very satisfying, indeed. This time we are treated to rabbit with beans and potato gravy.
