Meadows can change the taste of cheese

Until a few decades ago, they were common habitats in the Italian countryside — food for the cows whose milk would be used to make famous cheeses like Parmigiano, but today they’re ever-rarer. Natural meadows are gradually disappearing, and along with them, important ecosystems brimming with flora and fauna that give Italian formaggi their special flavors.
