Math in the Bakery – A Formula for Bread

Everyone has experienced improperly baked bread rolls. So did the mathematician Uwe an der Heiden.

When a colleague told him that many ovens in mid-sized bakeries are not used to capacity, an der Heiden began looking for a mathematical solution, analyzing work processes at various bakeries. It turned out that bread and cake bakers were vying for time at the ovens.Having recognized the problem, Uwe van der Heiden began calculating. More than 1,000 steps had to be taken into consideration. The result was the "virtual bakery" in which all processes are coordinated. A software company has further developed the programme, which is meanwhile used in several bakeries.
