The 35 year old is Chef de Cuisine in Roly's Bistro, Dublin. The restaurant was founded in 1992 by the award winning chef Colin O'Daly. Fine cuisine at reasonable prices.

Colin O'Daly has won numerous national and international awards including a Michelin star.

And he's already helped Roly's Bistro win its first prizes -- for being the best gourmet restaurant in Dublin and Ireland.
