Finnish Fish Soup

Marjaana Lahtua owns an organic farm in Southern Finland's lake district. She prepares pike soup with milk for euromaxx à la carte..it's a typical regional dish.

Ingredients (to serve four)

Finnische Fischsuppe - Hecht

2-3 medium sized onions
100 g. butter
4-5 medium-sized, waxy-type potatoes
500 ml. water
500 ml. fish stock
2 tsp. salt
500 g. pike fillets
500 ml. milk
dill to garnish.

Peel the onions and chop them finely. Fry them slowly in butter in a large pan to soften them. Don't let them get brown. Meanwhile, peel the potatoes and dice them into 1cm large cubes. Heat the water and fish stock in a second pan. Once the onions have become transparent, add the liquid as well as the salt, pepper and potatoes. Slice the pike fillets into large pieces and add them shortly before the potatoes are done. Let the milk come to the boil and add to the soup. Now let it simmer for five to ten minutes. Test the fish to see if it is cooked before adding finely chopped dill to taste. Finally season with salt and pepper and serve immediately.
